Inspired by the traditional delis found all across Europe, On The Fly started as an idea from the mind of Brick 29 Chef/Owner, Dustan Bristol. The idea was simple, let’s serve the finest and freshest food in the fastest possible way so they dubbed it ON THE FLY ROTISSERIE DELI. They roast all of their meat in house and prepare a lot of sandwiches and salads ready to grab out of the cooler. There are also paninis and sandwiches made to order as well as many options to buy rotisserie meats, vegetables, and salads by the pound.
With every changing season come new and exciting local ingredients incorporated into traditional deli foods such as a house-roasted beef sandwich with béarnaise aioli and arugula, a balsamic kale salad, house pickled eggs, housemade pickles, roasted cauliflower soup, and rotisserie salmon salad sandwich. Desserts include lemon basil bars made with house-made lemon curd and baked in a basil shortbread crust and a house-made rice crispy treat with chocolate chips, bourbon whiskey and cinnamon and served with caramel sauce.
