• About: Tips from a master sausage maker! Brad, owner, and his team from Country Meats will demonstrate some tips about sausage making with a demonstration and some samples.

11:30 AM – 1:30 PM: Breaking It Down – Beef Short Loin
• Topic: Breaking Down the Beef Short Loin
• Speaker: Dr. Phil Bass (aka – Dr. Meat) Phil Bass raised livestock and cut meat at an early age. He has a BS and MS degree in animal science from Cal Poly, San Luis Obispo and a Ph.D. in meat science from Colorado State University. Phil worked as the senior meat scientist at Certified Angus Beef for 8 years prior to joining the University of Idaho in 2017. His research focuses on applied meat animal carcass value discovery.

• About: Alex, the Queen of Canning, brings a decade of preservation expertise that meets modern culinary creativity, Alex brings you unique, artisanal jams and shelf-stable pickled goods designed to elevate your pantry selections. Beyond the jar, she shares her passion with the community by hosting canning classes at The Chef’s Table CDA, teaching others how to safely preserve their own delicious creations.

• Topic: Forestry – Species Idenfitication
• Speaker: Sara Ashiglar comes with a degree in Forest Management from Oregon State University and a M.S. in Forest Biology from the State University of New York-Environmental Science and Forestry. She has over 20 years of experience in forestry, silviculture and forest pathology and managed lands for the Forest Service, Washington Department of Fish and Wildlife and the BLM. She recently joined the University of Idaho Extension team in forestry. Sara spends her free time running, gardening, travelling and hiking with her two kids and Australian shepherd.
• About: Northern Idaho has a wide variety of native trees compared to other Rocky Mountain states due to varied geography, soils, and precipitation patterns. The first step in caring for these trees, whether they be in a landscape or in a forest, is correct species identification. Distinguishing between Idaho’s trees can be a daunting task for beginners. Through a combination of live samples and images, participants will learn to identify Idaho’s most common native trees.
