Farm Fresh Spring Salad Dressing
- Prep: 5 mins
At Homestead Produce, the seasonal salads are a celebration of the farm’s current offerings, showcasing greens, vegetables, and herbs in peak condition. The satisfaction of crafting these dishes is heightened by incorporating as many homegrown, foraged, and locally sourced ingredients as possible. Gardeners are encouraged to use whatever is thriving in their own gardens when recreating this dish.
The foundation of the salad is always a base of greens, with spinach, lettuce mix, or butterhead lettuce being top choices.
To this, an array of vegetables is added—sliced radishes, spring carrots, cucumbers, asparagus, or peas bring both flavor and texture. Rough-chopped hard-boiled eggs introduce new color dimensions and an element of interest, further complemented by the irresistible crunch of crispy fried bacon.
Herbs are the final touch, with chives, parsley, or mint being excellent options. A few sprigs of fresh dill are a personal favorite, offering a bright and aromatic note. Dill can also be incorporated into a creamy dressing for an extra burst of flavor.
Ingredients
1/3 cup of cream (remember you can ladle cream off the top of your raw milk)
1/2 cup of sugar ( you may use less if you wish )
1 tsp salt
1 tbsp vinegar (I like to use apple cider vinegar)
2 tbsp mayonaise (you may use your homemade mayo)
Steps
Mix well with a whisk or an immersion blender. Drizzle over fresh greens and enjoy!
