Happy Hog Meatery began with a simple desire: to know exactly what was in the food being served to family and friends.
Jaime and her partner both grew up immersed in gardening and food preservation. Growing up on the Oregon coast gave him early experience in smoking, canning, and pickling fresh-caught fish. Jaime spent her youth learning to tend gardens and process the harvest through canning, pickling, and drying. When the two met, their shared passion for food preservation created a perfect partnership.
Over the past 15+ years, they honed their craft, starting with grinding beef roasts into hamburger, transforming pork butts into breakfast sausage, processing pork and beef into snack sticks, and turning game meat into jerky and sausage for friends. Along the way, they explored making cured meats, pickled and fermented delicacies, and, of course, perfecting sausage recipes. Their small kitchen quickly filled with larger grinders, stuffers, and trays, while nights were spent smoking 100-200 pounds of product in a homebuilt smoker.
What began as a hobby soon became a vision for the future. The dream was to retire and take their meat processing skills to the next level, launching a full-scale business. That opportunity came unexpectedly in July 2022, when Jim Boland, the owner of Hog Heaven Sausage Works, announced his retirement after decades in the meat processing industry, starting with C&L Meat Locker in the late 1960s. With determination and a bit of trepidation, they took the plunge, acquiring the space, equipment, recipes, and legacy of Hog Heaven, rebranding it as Happy Hog Meatery.
Through rigorous training, piles of paperwork, and relentless effort, Happy Hog Meatery became a USDA-certified meat processor, adhering to the highest quality and safety standards. Their commitment to excellence ensures that every product they sell is something they would proudly serve at their own family table.
