Looking for a tasty and unique way to celebrate St. Patrick’s Day this year? Try this Idaho twist on a classic Irish dish, Colcannon! This creamy and savory dish is made with Idaho potatoes, Idaho butter, and Idaho cabbage or kale, (you can even substitute brussels sprouts!) resulting in a dish that’s both delicious and distinctly Idahoan.

Ingredients

2 pounds Idaho potatoes, peeled and cubed

1/2 cup Idaho butter

1 cup Idaho milk

1/2 head Idaho cabbage or 2 cups Idaho kale, chopped

Salt and pepper to taste

Optional: 1/2 cup cooked, chopped bacon or ham

1/4 cup chopped scallions or green onions

Steps

  • Boil the potatoes in salted water until tender, then drain and mash them with 1/4 cup of butter (reserve the rest for next step) and the milk. Season with salt and pepper to taste.

  • In a separate pot, sauté the cabbage or kale in the remaining butter until it’s wilted and slightly browned.

  • Mix the sautéed cabbage or kale into the mashed potatoes until fully combined. If desired, mix in bacon and chopped scallions or green onions for an extra pop of flavor.

  • Serve hot and enjoy!
