Purple Barley Cranberry Salad

    Ingredients

    • 1 ½ cups cooked 1000 Springs Mill Purple Barley (drained)
    • ¾ cup dried cranberries
    • 1 Tablespoon finely chopped red onion
    • 1 cup coarsely chopped walnuts
    • 1 bunch of Arugula
    • Mix all of the ingredients in a large bowl
    • Toss with dressing
    • 1/2 cup orange juice
    • 1 teaspoons lemon juice
    • 1/2 cup of olive oil
    • Salt and pepper to taste

    Steps

    • Combine ingredients in a bowl. Refrigerate and enjoy!
