Slow Cooker Beef Barbacoa

Ingredients
¼ cup Lime Juice
¼ cup cider vinegar
3 chipotle peppers in adobo sauce
4 garlic cloves, thinly sliced
4 tsp. Ground cumin
3 tsp. Dried oregano
1 ½ tsp. Pepper
¾ tsp salt
½ tsp ground Cloves
1 cup chicken broth
1 boneless beef chuck roast (3-4 pounds)
3 bay leaves

Steps
Place the first 9 ingredients in a blender; cover and process until smooth. Add broth and pulse until combined.
Place roast and bay leaves in a 4 to 5 qt. Slow cooker; pour sauce over top. Cook, covered on low for 7 to 9 hours or until meat is tender.
Serve as a rice bowl, tacos, etc
