Ingredients

  • 2 cups cooked turkey, shredded
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, chopped
  • 6 cups turkey or chicken broth
  • 2 potatoes, peeled and cubed
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Steps

  • In a large pot, sauté onion and garlic until golden.

  • Add carrots, celery, and cook for a few minutes.

  • Pour in broth, add potatoes, and toss in the bay leaf.

  • Simmer until vegetables are tender.

  • Add shredded turkey, season with salt and pepper. Simmer about ten minutes.

  • Remove bay leaf, ladle soup into bowls.
