August and late summer are the prime time for enjoying fresh Idaho blackberries. During this time, the berries are at their peak sweetness and juiciness, making them the perfect ingredient for refreshing summer recipes like blackberry lemonade.  The sugar produced from Idaho sugar beets is used in a wide variety of food products, from baked goods to candy to beverages, and is an important ingredient in many of the foods we enjoy every day.

Ingredients

  • 1 cup blackberries
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup sugar
  • 4 cups water
  • Ice cubes
  • Lemon slices, mint sprigs, and extra blackberries for garnish (optional)

Steps

  • In a blender or food processor, puree the blackberries until smooth.

  • In a large pitcher, combine the blackberry puree, lemon juice, sugar, and water. Stir until the sugar has dissolved.

  • Taste the lemonade and adjust the sweetness as desired by adding more sugar or lemon juice.

  • Add ice cubes to the pitcher or to individual glasses.

  • Serve the blackberry lemonade with lemon slices and extra blackberries and a sprig of Idaho mint for garnish, if desired.
