Minted Fresh Carrots


Serves 6


  • 5-6 carrots, cut into strips or slices
  • 2 Tablespoons butter
  • 1 Tablespoon honey
  • ¼ cup mint jelly or 2 teaspoons fresh mint, chopped


  1. Peel and slice carrots. In medium saucepan, cover carrots with water and bring to boil. Reduce heat and cook carrots until tender-crisp – approximately 10-15 minutes depending on size of slices/strips. In microwave safe bowl, combine honey and butter. Heat just until butter melts. When carrots are done, drain water. Return carrots to saucepan, add honey mixture and chopped mint; toss to coat. Simmer until glazed, approximately 5 minutes. Garnish with fresh mint leaves.
