2 pounds Idaho potatoes, peeled and cubed
1/2 cup Idaho butter
1 cup Idaho milk
1/2 head Idaho cabbage or 2 cups Idaho kale, chopped
Salt and pepper to taste
Optional: 1/2 cup cooked, chopped bacon or ham
1/4 cup chopped scallions or green onions
Boil the potatoes in salted water until tender, then drain and mash them with 1/4 cup of butter (reserve the rest for next step) and the milk. Season with salt and pepper to taste.
In a separate pot, sauté the cabbage or kale in the remaining butter until it’s wilted and slightly browned.
Mix the sautéed cabbage or kale into the mashed potatoes until fully combined. If desired, mix in bacon and chopped scallions or green onions for an extra pop of flavor.
Serve hot and enjoy!
