Ingredients
- 1 pound Idaho Trout, cut into strips
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup of your favorite Idaho Craft Beer
- Vegetable oil, for frying
- 4 large potatoes, peeled and cut into wedges

Preheat the oven to 400°F (200°C).
In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
Slowly whisk in the beer until a smooth batter forms.
In a large pot or deep fryer, heat the vegetable oil over medium-high heat to 375°F (190°C).
Dip each fish strip into the batter, then carefully place it into the hot oil. Fry until golden brown, about 4-5 minutes.
Remove the fish with a slotted spoon and place on a wire rack to drain excess oil.
Meanwhile, spread the potato wedges on a baking sheet and drizzle with a bit of vegetable oil. Season with salt and black pepper.
Bake the potato wedges in the preheated oven for 25-30 minutes, until golden brown and crispy.
Serve the fish and chips hot, garnished with lemon wedges and your favorite dipping sauce.
