Idaho Craft Beer-battered Fish and Chips

Ingredients

  • 1 pound Idaho Trout, cut into strips
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup of your favorite Idaho Craft Beer
  • Vegetable oil, for frying
  • 4 large potatoes, peeled and cut into wedges

Steps

  • Preheat the oven to 400°F (200°C).

  • In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.

  • Slowly whisk in the beer until a smooth batter forms.

  • In a large pot or deep fryer, heat the vegetable oil over medium-high heat to 375°F (190°C).

  • Dip each fish strip into the batter, then carefully place it into the hot oil. Fry until golden brown, about 4-5 minutes.

  • Remove the fish with a slotted spoon and place on a wire rack to drain excess oil.

  • Meanwhile, spread the potato wedges on a baking sheet and drizzle with a bit of vegetable oil. Season with salt and black pepper.

  • Bake the potato wedges in the preheated oven for 25-30 minutes, until golden brown and crispy.

  • Serve the fish and chips hot, garnished with lemon wedges and your favorite dipping sauce.
