- 4 oz of Ruby Simple Syrup
- 1/2 cup fresh herbs of your choice (suggested: mint, thyme, or rosemary)
- 1/4 cup fresh lime juice
- Soda water
Bring 2 cups of water to a boil. Remove from heat and add the fresh herbs. Let steep for 5-10 minutes, then strain out the herbs and set the infused water aside.
Combine the rhubarb simple syrup with the herb-infused water and lime juice. Stir well to combine.
To serve, fill glasses with ice and pour in the rhubarb-herb mixture, leaving about an inch of space at the top of each glass.
Top with soda water and stir gently to combine.
Garnish with a rhubarb ribbon twist and additional herbs, if desired.
