Minted Fresh Carrots

Ingredients

  • 5-6 carrots, cut into strips or slices (Available at your local Farmers Market during season)
  • 2 Tablespoons Idaho butter
  • 1 Tablespoon Idaho honey
  • ¼ cup mint jelly or 2 teaspoons fresh mint, chopped

Steps

  • Peel and slice carrots.

  •  In medium saucepan, cover carrots with water and bring to boil.

  • Reduce heat and cook carrots until tender-crisp – approximately 10-15 minutes depending on size of slices/strips.

  • In microwave safe bowl, combine honey and butter. Heat just until butter melts

  • When carrots are done, drain water then return to saucepan.

  • Add honey mixture and chopped mint; toss to coat.

  •   Simmer until glazed, approximately 5 minutes.

  • Garnish with fresh mint leaves.
