Ingredients

  • 2 cups fresh or frozen peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Optional: chopped fresh mint or microgreens for garnish. Additionally, a dollop of sour cream brings a hint of creamy comfort.

Steps

  • Heat butter in a large pot over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 5 minutes.

  • Add the peas and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the peas are tender, about 10-15 minutes.

  • Using an immersion blender or transferring to a blender in batches, puree the soup until smooth.

  • Stir in the heavy cream and season with salt and pepper to taste.

  • Serve hot, garnished with chopped fresh mint or your favorite microgreens and sour cream if desired.
