Grilled Idaho Pear & Chicken Skewers

These skewers celebrate Idaho’s bounty with sweet, juicy pears, tender chicken, and tangy cherry tomatoes. The chicken is marinated to stay juicy and infused with a balanced mix of sweet, savory, and tangy flavors, perfectly complementing the natural sweetness of the pears. Ideal for summer grilling, backyard gatherings, or farm-to-table dinners.

Ingredients

  • Protein & Fruit:

    • 1 lb Idaho raised chicken breast or thighs, cut into 1-inch pieces

    • 2 firm Idaho pears (Bosc or Comice), cored and cut into chunks

    • 1 cup Idaho cherry tomatoes

  • Marinade:

    • 3 tablespoons Idaho honey 

    • 2 tablespoons extra virgin olive oil

    • 2 tablespoons apple cider vinegar

    • 2 cloves garlic, minced

    • 1 teaspoon Dijon mustard

    • 1 teaspoon fresh thyme or rosemary, finely chopped

    • Salt and freshly cracked black pepper to taste

Steps

  • Marinate the chicken:

    In a bowl, whisk together honey, olive oil, apple cider vinegar, garlic, mustard, thyme, salt, and pepper.

    Add chicken pieces and toss to coat. Marinate at least 30 minutes, up to 2 hours in the fridge.

  • Assemble skewers:

    Alternate chicken, pear chunks, and cherry tomatoes on soaked wooden or metal skewers.

  • Grill:

    Preheat grill to medium-high heat.

    Grill skewers 3–4 minutes per side, until chicken is cooked through and lightly charred, and pears are caramelized.

  • Serve:

    Drizzle with a little extra honey or balsamic reduction if desired.

    Optional garnish: chopped fresh parsley or thyme.
