Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup grated Idaho potato
  • 1/4 cup chopped onion
  • 1 garlic clove, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup breadcrumbs
  • 2 tablespoons all-purpose flour
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

 

Steps

  • In a large bowl, combine cooked quinoa, grated potato, chopped onion, minced garlic, chopped fresh parsley, breadcrumbs, all-purpose flour, beaten egg, salt, and black pepper. Mix well until all ingredients are combined.

  • Use a spoon to scoop out about 2-3 tablespoons of the mixture and shape it into a patty.

  • Repeat with the remaining mixture, making 8-10 patties.

  • Heat olive oil in a large skillet over medium heat.

  • Add the quinoa patties to the skillet and cook for 3-4 minutes on each side, until golden brown and crispy.

  • Serve hot, garnished with additional fresh parsley if desired.
