- 1 cup cooked quinoa
- 1/2 cup grated Idaho potato
- 1/4 cup chopped onion
- 1 garlic clove, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup breadcrumbs
- 2 tablespoons all-purpose flour
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
In a large bowl, combine cooked quinoa, grated potato, chopped onion, minced garlic, chopped fresh parsley, breadcrumbs, all-purpose flour, beaten egg, salt, and black pepper. Mix well until all ingredients are combined.
Use a spoon to scoop out about 2-3 tablespoons of the mixture and shape it into a patty.
Repeat with the remaining mixture, making 8-10 patties.
Heat olive oil in a large skillet over medium heat.
Add the quinoa patties to the skillet and cook for 3-4 minutes on each side, until golden brown and crispy.
Serve hot, garnished with additional fresh parsley if desired.
