This Peach Tomato Salsa combines the sweetness of ripe peaches with the acidity of fresh tomatoes for a refreshing and vibrant flavor contrast. The addition of lime juice, cilantro, and jalapeños adds balance, providing a hint of brightness and heat. The salsa has a juicy, chunky texture, with finely chopped ingredients offering a more uniform consistency, though a rustic, chunkier version works just as well. It’s perfect as a topping for grilled chicken, pork, or fish tacos, or as a dip with tortilla chips at summer barbecues. Using fresh Idaho peaches and tomatoes during peak season enhances the flavor, and adding locally grown herbs like cilantro boosts its freshness. For the best results, prepare the salsa a few hours before serving to allow the flavors to meld, but avoid making it too far in advance to preserve the peaches’ firmness. The heat level can be customized by adjusting the amount of jalapeño, and a touch of honey can be added for extra sweetness if desired.



 

Ingredients

  • 2 Idaho peaches, chopped
  • 4 Roma Idaho tomatoes, chopped
  • 1/2 cup Idaho bacon, fried & chopped
  • 1/2 bell pepper, chopped- Available during the Idaho Farmers Market season
  • 1/3 cup sweet Idaho onion, chopped
  • 1-2 jalapeno peppers, seeded & chopped (farmers markets)
  • 2 teaspoons brown mustard
  • ¼ cup cilantro, chopped – Available at your local farmers market during season
  • 1 tablespoon local honey
  • Salt and pepper to taste

Notes

  • Prepare grilled pork or chicken and top with peach and tomato salsa for a sweet and refreshing dinner option.

Steps

  • Combine chopped peaches, tomatoes, bacon, bell pepper and sweet onion in a medium-size mixing bowl.

  • Stir in a desired amount of chili peppers and the mustard, cilantro and honey.

  • Season with salt and pepper.

  • Allow salsa to sit in the refrigerator for one hour to combine flavors.

  • Serve with local Fresca tortilla chips.
