Grab some fresh tortillas from your favorite Idaho tortillaria, fill them with a blend of creamy Idaho cheeses, and you’ve got a quesadilla that’s ready to satisfy. For a bit of extra zest, pair it with a side of salsa made from Idaho-grown tomatoes and peppers. It’s the perfect way to support local farmers and enjoy a delicious, homemade meal.

    Ingredients

    • 4 10-12 inch flavored Idaho tortillas
    • 2 cups Idaho cheese, shredded
    • 1 pound thinly sliced deli roast beef
    • ½ cup salsa

    Steps

    • On pre-heated large flat grill or grill pan, place tortilla. Spray lightly with cooking spray and turn. On one half of the tortilla, place ¼ pound deli roast beef, 2 tablespoons salsa, and ½ cup shredded cheese. Fold other half of tortilla over cheese. Let cook until browned on one side, then carefully turn and cook on other side until browned and crispy. Serve with additional salsa, Garbanzomole, and sour cream.
