Spyglass Gardens Zesty Fresh Salsa

    Buckle up for a flavor fiesta with this zesty fresh salsa recipe straight from the farm! Sun-ripened tomatoes, the fiery kick of locally-grown peppers, a whisper of lime, and a sprinkle of cilantro make this salsa from Spyglass Gardens the perfect complement to your chips, tacos, or anything else craving a taste of garden goodness.     • 4 – 6 ripe Celebrity or Beef Steak tomatoes
    • 5 Roma tomatoes
    • 1 large white onion
    • 4 – 6 cloves fresh garlic
    • 1 to 2 cups fresh cilantro leaves
    • 2 yellow banana peppers
    • 1 green and 1 red bell pepper
    • 2 Anaheim peppers
    • 1-2 Jalapeno peppers
    • 1-2 tomatillos
    • 2 limes
    • 1 Tbsp kosher salt, add more if desired


    • Dice the onion, tomatoes, and tomatillos.

    • Chop the garlic and cilantro.

    • Remove the seeds and dice the yellow banana peppers, bell peppers, and Anaheim peppers.

    • Finely dice the jalapeno peppers and keep the seeds. For a milder taste, remove the seeds and membrane from the jalapenos.

    • Zest and juice the limes.

    • Combine everything in a large bowl, tasting as you add the hotter peppers.

    • Can add fresh corn for a pop of sweetness.

    • Serve immediately or chill for later with a big bag of chips.
