From field to table, Idaho-grown garbanzos have come full circle—starting in the soil at Zenner Family Farms and ending up in this family-friendly Chicken Kefta Wrap made with creamy Zacca Hummus.

As an Idaho farm family, supporting local growers is at the heart of my mission to share family-friendly recipes that bring people together around the table. Choosing Idaho-grown ingredients means every bite tells the story of our land, our farmers, and the communities we call home.

This harvest season, let’s continue to support local growers and makers—because when we choose local, we all thrive. ~ Kayla Zenner, The Farm Style

Ingredients

1 lb. Ground Chicken

1/2 Idaho Red Onion grated, grated

1/2 cup Fresh Cilantro, finely chopped

1/4 cup Fresh Idaho Mint, finely chopped

1 tsp. Salt

1 tsp  Paprika

1/2 tsp Ground Cumin

1/2 tsp Ground Turmeric

Zest of 1 Lemon

1 cup Zacca Hummus

2 cups Arugula

1 Cucumber, diced

1 cup Cherry Tomatoes, quartered

4 Tortillas

Steps

  • Preheat grill to medium heat.

  • In a large bowl, combine the ground chicken with the onion, chopped herbs, lemon zest, and seasonings. Mix well.

  • Using wet hands, divide meat mixture into four equal portions and shape into long patties (about 6 inches long). Place into the freezer for 10 minutes to help the mixture set up before placing onto the grill.

  • Place patties onto the grill and cook for 6-8 minutes per side. My grill was about 350º F.

  • Assemble your wrap by starting with a tortilla, a generous slather of Zacca Hummus, chicken kefta patty, arugula, diced cucumber, and cherry tomatoes. Wrap tightly and enjoy as is, or place into a skillet and cook over medium heat for 1-2 minutes per side.
