    A great appetizer or snack using one of Idaho’s pulse crops – garbanzo beans (chickpeas)

    Ingredients

    • 1 pound fresh green Idaho garbanzo beans
    • ¼ cup sour cream- Idaho
    • ½ small Idaho onion, finely chopped
    • ½ -1 jalapeno pepper, finely chopped
    • 2 cloves garlic, finely chopped
    • 10 sprigs fresh cilantro, chopped
    • ¼ – ½ teaspoon chili powder
    • 2 Idaho tomatoes, chopped
    • Juice from ½ lime
    • Salt and pepper to taste

    Steps

    • Simmer fresh garbanzo beans in boiling water until very soft – approximately 20 minutes. While beans simmer, chop onion, jalapeño pepper, garlic, cilantro and tomatoes. When beans are cooked, drain, rinse under cold water and place in food processor or blender. Blend on high speed until smooth. Add sour cream and mix until blended and smooth. Add chopped ingredients, chili powder, salt, pepper and lime juice. Pulse just until thoroughly blended.
