Ingredients
- 4 – 6 ripe Celebrity or Beef Steak tomatoes
- 5 Roma tomatoes
- 1 large white onion
- 4 – 6 cloves fresh garlic
- 1 to 2 cups fresh cilantro leaves
- 2 yellow banana peppers
- 1 green and 1 red bell pepper
- 2 Anaheim peppers
- 1-2 Jalapeno peppers
- 1-2 tomatillos
- 2 limes
- 1 Tbsp kosher salt, add more if desired

Steps
Dice the onion, tomatoes, and tomatillos.
Chop the garlic and cilantro.
Remove the seeds and dice the yellow banana peppers, bell peppers, and Anaheim peppers.
Finely dice the jalapeno peppers and keep the seeds. For a milder taste, remove the seeds and membrane from the jalapenos.
Zest and juice the limes.
Combine everything in a large bowl, tasting as you add the hotter peppers.
Can add fresh corn for a pop of sweetness.
Serve immediately or chill for later with a big bag of chips.
